【范頭家】苗栗知名客家餐廳「范頭家」進軍台中 客家大老進餐廳拍桌找老闆

在苗栗負盛名的客家菜餐廳「范頭家」去年底進軍台中市,在北屯的機捷特區開了新店後,也受到大家歡迎。42歲的老闆范文馨說,其實他為了女兒讀書,住進機捷特區已7年,因為朋友吃過苗栗的范頭家而紛紛勸進,他才決定在機捷特區開店,也相當看好機捷特區的發展,未來要以還原客家菜的價值和發揚客家的精神為職志。

范文馨學的並不是廚藝,而是26歲經營民宿時,因廚師用屋前的香草做出不錯的套餐,他因此對西餐有興趣,也在苗栗頭份開了家西餐廳,未料西餐廳賠了兩千多萬元,他改變方向,轉而經營客家菜,生意反而變好。大家也因為在西餐廳原本的法式風格建築內吃客家菜而感覺新奇,慢慢做出了知名度。也因為朋友的遊說,他後來又在苗栗市開店,6年來受到鄉親喜愛。

他說,祖籍是廣東梅縣,那是一個客家的小聚落,因此,他以粵菜做底色搭配,並用苗栗道地的筍絲、梅干菜,或是老菜脯入菜,還原老客家菜的風味。像許多人愛喝的老菜脯雞湯,那是來自於客家人節省的習性,才能把蘿蔔做成老菜脯,而且能一放20年。他們也就以好客的心情,把這份價值還原給客人。

范文馨說,有次新竹縣前縣長范振宗到餐廳吃飯,看到餐廳取名范頭家,高興的拍桌,還問頭家是誰?他趕緊前去,才知原來是因為同姓,又是客家人,范振宗看到頭家兩字倍感親切。他說,頭家的意思,在客廳話就是小老闆的意思。他取其為名,則是希望把客人當老闆來好好款待。

范文馨說,去年他12月在機捷特區開店,沒幾個月就過年,年菜生意已很火熱,今年除夕年菜到除二的內場兩輪都已預訂滿,外帶限量兩百組,現也訂了3成。他認為,除了感謝客人的支持,也因機捷特區還在發展中,仍持續看好此區的商機,未來也想繼續往南屯等地展店。餐廳電話(04)24371212。
